Okay, this looks totally different while in the crock pot than it does on the plate. This isn't looking too "layered" on the plate. To some it may not look very yummy at all.. trust me, I was questioning it myself.. however to my surprise, it was really good! Here is the recipe that I did...
2 lbs (aprox. because I don't measure things) Lean Ground Beef
1 Lg. Chopped Onion
3/4 Cup Chopped Green Peppers
1 Can Black Beans
1 Can Rotel Original
1 Can Diced Tomatoes
1 Can Enchilada Sauce (or you can use the dry package)
1 Sm. Can Cream of Mushroom soup
1/2 tsp. Salt
Black pepper
Shreadded Cheese.. We like cheese a LOT but you may not want to add to much.. I added it to each layer as well as on top.
Flour Tortillas cut these into small strips / pieces. I used longer strips and wish I had used the smaller.
Brown meat with onions and green peppers, making sure to drain of the grease. In a bowl, you will add all other ingredients excluding tortillas and cheese.
In the crock pot, start with a layer of meat, then tortillas, tomato mixture and cheese. Continue with these layers until everything is used. Cover and cook on low.. my crock pot has 10 / 8/ 6 / 4 hour increments. I went with 8 and between 6/7 hours in I changed it over to warm.
Not one bit was left for leftovers. Some of us topped it with sour cream and it was great. This is a keeper for sure!
